Easy Homemade Chicken Pot Pie Recipe

When I think of Autumn I think of the different flavors of fall.

Pumpkin Spice, apple, soups and pies oh my!

Homemade Chicken Potpie has got to be a family favorite food in our house especially in the fall. Come to think of it I’m not exactly sure why we only eat Chicken Potpie in the fall. It’s delicious! My family really enjoys it.

While I don’t mind making complicated dinners, I much rather make dinners that I can just make fast and be done. Chicken pot pie is that dish for me. While it took a little more time because I did the leaf cutouts with a cookie stamper similar to these the only difference is I bought mine a few years ago so there’s slight variations in my original stampers. And in the spirit of honest I am down to one because I’ve misplaced the other 3 ha. These stampers are awesome and now that I know amazon has many more options I will be ordering more soon. They have so many different seasonal variations. How fun!

Easy Homemade Chicken Pot Pie

Boneless Skinless Chicken Breast

Pie Crust (homemade or store bought)

Bag of Frozen Mixed Veggies


TIP* Be sure to thaw pie crust before trying to roll the crust out.

Once the pie crust is thoroughly thawed place pie crust in pie pan. Dump small bag of frozen mixed vegetables in the bottom of the pie crust.

Add 2 cups of shredded chicken. You can learn about how I made my shredded chicken here.

Mix veggies and chicken in the pie dish and add more chicken OR veggies if the pie crust allows. 

I utilize this Heinz Home Style Classic Chicken Gravy for my pot pies. You may use any gravy you like. For each pot pie I used approximately 2 jars of this gravy. Be sure to mix the the gravy in with the chicken and veggies.

At this point I added black pepper (not shown).

*Take your fork and add a few vent holes. I made “x’s” to look pretty and just integrated them in to the design. 

Cover the Chicken Pot Pies with aluminum foil to avoid burning the edges. With oven set to 400 bake for approximately 45 minutes covered. Uncover the chicken pot pie and return to the oven for approximately 10 minutes. Be sure to check the pot pie for doneness.

If you have any advice or tips on how to slice a chicken pot pie please share. I didn’t take any pictures of the chicken pot pie served because I am terrible at taking slices out. It didn’t look pretty BUT it sure tasted delicious! Next time I need to make sweet potatoes or mashed potatoes to go along with this dish.
